Recovery from IBS on Specific Carbohydrate Diet: Kat Garson

It is time to start my weekly blog post to highlight my guest for the following radio show! I am very excited about this opportunity to provide a platform to share these great stories!

Kat has such a story that grabbed me when I first found her blog while researching the GAPS Diet and Specific Carbohydrate Diet a few months ago, in September, 2011. I saw my now-adult children (very close to her age) in her story, particularly my two sons! I know that her story also may sound like yours or that of someone you love.

I am excited about having Kat here to share some of her story of recovery from IBS and (undiagnosed–meaning she was already avoiding gluten when tested) Celiac Disease on the Specific Carbohydrate Diet (SCD).

Kat enjoyed a typical adolescent and teen diet while growing up in Canada – one very similar to that here in the United States. She ate cereal with 2% milk to start her day, a sandwich for lunch, and meat, vegetable and grain for dinner. This sure does sound familiar to me, does it to you? This is much of what my diet consisted of for decades, and the same goes for my now adult children.

Kat was diagnosed with IBS at the age of 18 and began her circuitous journey of discovery and healing that led her to the Specific Carbohydrate Diet (SCD) 7 years later in 2008.

Kat will share about her “Aha!” moment when her Naturopathic Doctor made a statement that provided insight into a dietary connection to her digestive issues.  Kat will talk about first going gluten free for months before starting on the SCD. Her experience is not atypical of what others have discovered — gluten free is only a piece of the puzzle and not enough for complete healing!

Kat will also share about her experience of adding red meat and high quality animal fats back into her diet for the first time in years–it wasn’t easy for her! Kat has now followed the SCD principles since 2008 and experienced a very good year of health in 2011, the best year yet for her!
